Norfolk Punch Tea Loaf

A traditional english tea loaf with fruit soaked in Norfolk Punch instead of black tea


Ingredients

250ml Norfolk Punch

225g mixed dried fruit

225g self-raising flour

100g caster sugar

1 large beaten egg

2 tablespoons orange marmalade

 

  1. Place the fruit in a bowl, pour over the Norfolk Punch and soak overnight if possible or at least until the fruit swells.
  2. Grease a 1.5lb (675g) loaf tin
  3. Preheat oven to 180c or gas mark 4
  4. In a bowl combine the flour, sugar, egg and marmalade
  5. Pour in the fruit and any Punch left in the bowl. and stir thoroughly.
  6. Put in the loaf tin and bake in the oven for 1 hour.
  7. Allow to cool slightly before removing from the tin.

Delicious with or without butter!
