Norfolk Punch Tea Loaf

A traditional english tea loaf with fruit soaked in Norfolk Punch instead of black tea
Ingredients
250ml Norfolk Punch
225g mixed dried fruit
225g self-raising flour
100g caster sugar
1 large beaten egg
2 tablespoons orange marmalade
- Place the fruit in a bowl, pour over the Norfolk Punch and soak overnight if possible or at least until the fruit swells.
- Grease a 1.5lb (675g) loaf tin
- Preheat oven to 180c or gas mark 4
- In a bowl combine the flour, sugar, egg and marmalade
- Pour in the fruit and any Punch left in the bowl. and stir thoroughly.
- Put in the loaf tin and bake in the oven for 1 hour.
- Allow to cool slightly before removing from the tin.
Delicious with or without butter!
